Ingredients for Sambar: Lentils Aramanthus leaves Carrots Green beans Onion Tomatoes Drumstick Green chili Tamarind Turmeric Chili powder Sambar powder Salt Water

Soak lentils for 4 hours or overnight.  Drain and add along with remaining sambar ingredients into pressure cooker. 

Cook for 6 to 7 minutes until lentils are done. Release the pressure and stir the mixture to combine. 

In a skillet, combine the oil, mustard seeds, curry leaves, and dry red chile and cook on medium heat until aromatic and seeds begin to pop.  Pour over cooked sambar and stir to combine.
