SMOKY BAINGAN BHARTA MASHED ROASTED EGGPLANT

INGREDIENTS Eggplant Garilc Green chile Vegetable oil Cumin seeds Onions Tomatoes Turmeric Cumin Red pepper flakes Coriander Salt

Cut 1 to 2 deep verticle slits in the eggplant and stuf the garlic cloves and chile into them.

Roast the eggplant over open flame for 8 to 10 minutes until softened and charred.

Peel the charred skin off the eggplant then mash it along with the chiles and garlic and set aside. 

In a skillet, saute the cumin seeds, onions, tomatoes, and herbs until tender and aromatic.  Mix in the eggplant mash.

Combine and cook for an additional 1 to 2 minuets to heat through and combine flavors.  Top with coriander leaves before serving.
