In a medium skillet, heat oil along with the mustard seeds, curry leaves, asafoetida, and dry red chili. Once fragrant, add potatoes, turmeric, and salt. Cook to heat through then set aside.
Cook dosa for 2 minutes then flip and cook for an additional 1 minute or heat ready-made dosa. Stuff with the potato masala and serve with chutney.
