In a small skillet, roast the peanuts then set aside. Place the tomato, peeled garlic, and coriander leaves into the same skillet and cook for 2 minutes to heat through and brown slightly.
Pulse the ingredients together until smooth. Then heat oil, red chile, curry leaves, and mustard seeds until fragrant. Pour the tempering mixture over the chutney before serving.
