JAPANESE TAKOYAKI OCTOPUS BALLS

INGREDIENTS All-purpose flour Eggs Salt Dashi stock Dark soy sauce Cooked octopus Seaweed powder Green onions Japanese mayonnaise Bonita flakes

In a large bowl, whisk together the flour and salt.  Add the doshi stock, dark soy sauce, and eggs and whisk until a batter forms. 

Heat a takoyaki pan and oil each hole.  Fill with batter then add your fillings of octopus, scallions, and seaweed powder.

Use chopsticks to turn your takoyaki 90 degrees, then add additional batter to fill and cover. 

Continue turning ever minute until golden brown and ready to serve. 

Brush with takoyaki sauce then drizzle with mayonnaise and top with bonito flakes and scallions before serving.
