THAI CHICKEN MEATBALLS

INGREDIENTS – Ground chicken – Garlic cloves – Fresh ginger – Kaffir lime leaves – Mint leaves – Coriander leaves – Fish sauce – Lime juice – Brown sugar – Red chili – Olive oil

Combine the ground chicken with garlic, ginger, kaffir lime leaves, mint leaves, and coriander leaves.  Then form into 1" meatballs.  Place on a plate, cover loosely and refrigerate for 30-minutes.

In a small bowl whisk together the fish sauce, lime juice, brown sugar, red chili, and olive oil until the sugar is dissolved. 

In a large skillet, cook the meatballs over medium heat for 2 to 3 minutes per side until they are at least 165F internally.  Serve with dipping sauce.
