THAI OMELET

INGREDIENTS Eggs Lime juice Thai fish sauce Rice flour Water Oil for frying Red chili Green onion

Whisk together the eggs, fish sauce, lime juice, water, and rice flour until combined and no lumps remain. 

Heat oil to nearly smoking, then pour the omelet over the hot oil and cook for 20 to 30 seconds per side.  Serve topped with sliced green onions and red chiles.
