Bring a pan of water to a boil, add the chicken, then cover and cook for 15-minutes until the chicken is cooked through. Set aside to cool then shred.
In a small bowl or salad dressing jar, combine the dressing ingredients and whisk or shake until combined.
Toss the salad, chicken, dressing, and crushed peanuts together then serve!
