This delicious Thai curry chicken noodle soup is packed with flavor and easy to prepare in minutes!
INGREDIENTS Oil Chicken Salt & Pepper Onion Garlic Bell pepper Red curry paste Ginger Chicken broth Coconut milk Fish sauce Brown sugar Rice noodles Basil Cilantro Green onion Lime juice
Season and cook the chicken for 2 to 3 minutes until nicely browned, then remove from the pot and set aside.
Cook the onion and bell pepper until tender, then add in the curry paste, ginger, and garlic and cook for another few minutes.
Add the chicken broth, coconut millk, brown sugar, and fish sauce then bring to a boil. Add the chicken and bring to a boil.
Add the rice noodles and cook for another 5 minutes. Add lime juice then taste and add salt and pepper. Serve with basil, cilantro, and green onions.
Serve hot with additional chutneys if desired on top!
