Crispy Thai Omelet Recipe

Ingredients

  • 2 Eggs
  • ½ tsp Lime juice
  • 1 tsp Thai fish sauce
  • 1 tsp Water
  • 1 tsp Rice flour
  • Vegetale oil 1 cup for frying

Instructions

  • In a medium bowl, crack the eggs being careful to remove any broken shell.
  • To the bowl of eggs, whisk in the lime juice, fish sauce, water, and rice flour until incorporated and no lumps remain from the rice flour.
  • In a small skillet, heat the vegetable oil until 350°F or piping hot.
  • Once the oil is hot, pour the egg mixture on top of the oil. It will immediately puff up.
  • Cook for 20 to 30 seconds without touching.
  • Then flip the omelette over to the other side to finish cooking for an additional 20 to 30 seconds.
  • Serve hot with freshly chopped green onions and chilis for garnish.

Notes

Add chopped green chiles to batter for a spicier omelet.
