Ingredients

Eggs

Thai fish sauce

Rice flour

Instructions
In a medium bowl, crack the eggs being careful to remove any broken shell.
To the bowl of eggs, whisk in the lime juice, fish sauce, water, and rice flour until incorporated and no lumps remain from the rice flour.
In a small skillet, heat the vegetable oil until 350°F or piping hot.
Once the oil is hot, pour the egg mixture on top of the oil. It will immediately puff up.
Cook for 20 to 30 seconds without touching.
Then flip the omelette over to the other side to finish cooking for an additional 20 to 30 seconds.
Serve hot with freshly chopped green onions and chilis for garnish.
Notes
Add chopped green chiles to batter for a spicier omelet.
