THAI CHICKEN LARB EASY SALAD RECIPE

A simple mixture of chicken, spices, and vegetables makes a light and healthy meal you'll love!

INGREDIENTS Vinegar Onions Oil Ground chicken Garlic Lemongrass Red chile Salt & pepper Cucumber Scallions Cilantro Mint Basil Fish sauce Lime juice Brown sugar

In a small bowl combine the hot water, vinegar, and onions then refrigerate to create pickled onions for adding to the salad later.

In a large bowl, combine the cucumbers, onions, and salad ingredients then toss to combine.  Set this aside or in the refrigerator until ready to serve.

In a large skillet, heat the oil and cook down the onions, lemongrass, garlic, and red chili.  Then add in the ground chicken and cook for 6 to 10 minutes until the chicken is cooked.

Once the chicken is done cooking, combine it and the onions with the salad you prepared earlier.  Toss well to combine, then serve on lettuce or with rice.

Serve the salad alone, on lettuce leaves, or over rice for a tasty meal!
