Ingredients For the Recipe

You will require two sets of ingredients to make the chili chicken. 

For the green chili paste

  • Green chilies: 12-15
  • Water: A little

For the chili chicken

  • Oil: 1½ tbsp
  • Prepared green chili paste: 1 tsp
  • Green chilies (slit): 5-6
  • Chicken: 250 gms
  • Salt: 2 tsps or as per taste
  • Vinegar or lemon juice: ⅛ cup
  • Soy sauce: 1 tbsp
  • Water: 2½ cups 
  • Cornflour slurry: 3 tbsps

How to Make the Andhra Chili Chicken

Ready with all your ingredients? Here’s the quick, step-by-step process of making the recipe. 

Add some green chilies and water in a blender and make it a paste

For the green chili paste, add the green chilies to a blender with a little bit of water and make it into a paste.

Add green chilli paste in to the pan and sauté

Heat oil in a pan and add the green chili paste. Saute for 1-2 minute.

Add some slit green chillies and mix well

Next add the slit green chilies and give it a good mix. 

Add some chicken pieces to the mixture and mix well

Add the chicken next and saute. Let it cook for about 3-4 minutes. 

Add some salt, vinegar and soy sauce and mix well. 

Next, add the salt, vinegar, and soy sauce. Mix well. 

Add some water to it and cook

Add water and mix well. Let the mixture cook for about 10-12 minutes or until the chicken is cooked. 

Add some cornflour slurry to make the gravy little thick

Once the chicken is cooked, add the cornflour slurry and mix. 

Serve the hot and spicy Andhra Chili Chicken with chapatis or rice

Serve hot with rice.

Can I Use Store-Bought Chili Paste?

If you don’t want to go through the process of making the chili paste, you can actually make do with the store-bought version instead as well. Just remember to give it a quick taste to determine the level of spice the chili paste has so that you know how much you should be adding to the recipe.

  • To lend the dish that nice green color, you can also add some chopped up coriander leaves or curry leaves. 
  • If the chicken and the mixture starts to feel like it is burning, you can add a bit of water. 
  • Is your Andhra chili chicken feeling too spicy? You can tone it down by adding a teaspoon of sugar into the mix. 
  • To get the chicken more tender and flavorful, you can marinate the chicken in some buttermilk or yogurt for 45-60 minutes. The longer you allow the chicken to marinate, the better. Overnight marination can really work wonders especially when it comes to making the chicken juicy and flavorful.

Notes

  • This dish is on the spicy side, So if you are not too accustomed to having spicy food, then you will need to adjust the spicy level by reducing the number of green chilies used.
