So why would you want to switch your typical breakfast omelet (or snack) and try this one- you may ask? Well, here’s why.
The umami flavor added from the combination of fish sauce and lime juice elevates an ordinary egg to a new level. Unlike what most consider an omelet, this is fried in oil to be crispy on all sides. It also takes less than one minute to cook and only seconds to whisk together, so a very fast and easy but also healthy breakfast.

How to Make the Crispy Thai Omelette
In a medium bowl, crack the eggs being careful to remove any broken shell.
To the bowl of eggs, whisk in the lime juice, fish sauce, water, and rice flour until incorporated and no lumps remain from the rice flour.
In a small skillet, heat the vegetable oil until 350°F or piping hot.
Once the oil is hot, pour the egg mixture on top of the oil. It will immediately puff up.
Cook for 20 to 30 seconds without touching.
Then flip the omelet over to the other side to finish cooking for an additional 20 to 30 seconds.
Serve hot with freshly chopped green onions and chilis for garnish.
